Making Soba Noodles in Otoineppu

Here's Heather demonstrating how to sift the buckwheat.
Next mix the powder by hand... for a long, long time.

Rolling out the dough.
When it's big enough it looks like this. That's why the rolling pins are so long.

When it's all flattened, fold it and get ready to cut.
That anti-finger-cutting board is a good idea.
Here's the noodles all cut.
And wrapped up to prevent drying.
Boil a big pot of water.
And dump the noodles in for about 60seconds.
